Whole Roasted Red Snapper

Whole Roasted Red Snapper is what`s on the menu today. I know it can look a little intimidating but it`s honestly the easiest, tastiest fish preparation there is. Tender, moist and just delicious!! And it`s easier to see the freshness when buying whole fish vs filets.

Here`s what you need:
Whole Red Snapper- Cleaned & Scaled. Allow about a pound of whole fish per person
Fresh Herbs-I used basil, marjoram & oregano but use what you like, you can`t go wrong.
Lemons- sliced
Onion-Sliced, I used red but any will work perfectly
Olive Oil
S & P

 

When buying whole fish look for clear shiny eyes & firm flesh. It should not be tired looking.
Have your fish monger clean & scale the fish for you. No need adding extra work right.

 

 

 

Pat dry your fish and season the cavity with salt & pepper
Stuff the fish with the herbs, onion & lemon slices. Rub a little olive oil on the the skin.

 

 

Preheat your oven to 400 degrees. Line a baking sheet with foil & make a bed of lemon slices for your fish.

 

 

 

 

Bake for 35 minutes & serve. Promise you won`t be disappointed!!
