Oh Mondays, admittedly not my favorite day of the week. To many emails to catch up on, kids back to school, typically the start of a busy hectic week, & the first day back after a great weekend. Can we just start on Tuesday, I think I`d like it better. And then there`s the what`s for dinner question. Well, I have a great option for you! Today this simple man`s plan to better eating comes in the form of Weeknight Spanish Chicken Chorizo & Potato Bake. You`re going to love this! 5 minutes of active time & about an hour in the oven yields an amazingly delicious meal that`s just so crazy good. Perfectly cooked juicy chicken, tender potatoes & slightly crisped chorizo come together as kind of the perfect marriage. Once you make this I`m sure it`s going to become a regular addition to your dinner rotation. It`s just too fantastic & too easy not to.
Here`s what you`ll need for your Weeknight Spanish Chicken Chorizo & Potato Bake:
Chicken Thighs- 8, bone in skin on
Potatoes- 1 1/2lbs sliced about a 1/2 an inch thick.
Spanish Chorizo-8oz sliced
Olive Oil-2 Tablespoons
Paprika- 1-2 teaspoons
Garlic Powder-1 teaspoon
Onion Powder-1 teaspoon

Parsley- Chopped to garnishLook at these babies all lined up & ready for the plate.The stars of the show. So basic right. Obviously I`m using thighs here but drumsticks would be equally good. You could use breasts but I really like how moist & juicy darker meat stays. And please, on the bone & with the skin equals more flavor.Start by slicing the potatoes about a half an inch thick.Toss with a tablespoon or 2 of olive oil. Season well with salt pepper, garlic & onion powders.Remove the casing from the Spanish chorizo & slice.Season your chicken thighs with salt, pepper & paprika.Preheat your oven to 400 degrees. Lightly grease a baking dish & add the potatoes. Scatter the chorizo over the top. Lay the seasoned chicken on top of the potatoes & chorizo.Now a slice of lemon tops each piece of chicken. As everything cooks the drippings from the chorizo & chicken are going to blend with the lemon creating pure flavor magic for the potatoes. You`re going to so thank me for this! Slide the baking dish into your preheated oven & bake for about an hour or until the chicken is cooked through. Baked & ready to go!This is making me hungry & I just ate!Chop a little parsley to garnish & serve.
