Tequila Lime Shrimp

You just got home from work, you’re tired and everyone is hungry. This is for you, super easy, super fast, and best of all rock star delicious!! Shrimp, booze, fresh herbs, a couple of spices & lime. That’s it and  it will be on the table in a few minutes. Serve this over Coconut Rice or quinoa, add a vegetable or salad and done, done, & done.

Here`s what you need:
Tequila Lime Shrimp
1 lb Shelled & Deveined Shrimp (I like 21-25 ct)
1-2 Limes
Butter
Olive Oil
Minced Garlic
Smoked Paprika
Ground Chipotle Powder
Tequila
Cilantro Chopped

 

 

Clean and devein your shrimp. Season well with salt, pepper, paprika & chipotle. If spice is your thing go heavy on the chile.

Mince the garlic. In my case I love it so I used 5 cloves but this is all personal preference. Not a garlic fan use less or none at all.

 

 

 

 

Heat your pan at medium high. Take a second to chop your cilantro & maybe pour yourself a little of that tequila!  When pan is hot add your olive oil and butter. A tablespoon of each should do it. Throw in your garlic and stir for a minute until fragrant. Now add your shrimp. these are only going to take a couple of minutes so don’t go anywhere. 1-2 minutes on each side.

Now come the fireworks.  Add your tequila, give the pan a quick shake. If cooking with gas you can carefully tip the pan over the edge of the flame and the tequila will ignite. If not comfortable here use a long handled lighter and ignite that way.The flames will die out in a few seconds as the alcohol cooks off. After the flames have subsided remove from heat and squeeze your limes over the shrimp. Add the cilantro and give the pan a shake or stir.


That’s it, you’ve just made an amazing dinner in a flash.
On this occasion I served these babies over Coconut Rice with a quick veggie saute on the side. Dinner was on the table in 20 minutes start to finish.
