Taqueria Style Creamy Avocado Salsa is this simple man`s plan to healthier eating today. I have a confession, I`m a salsa addict. Especially Mexican salsa`s. There`s such an awesome wide range from mild to mind blowingly spicy, fresh, roasted, chunky, smooth, they really cover the spectrum & are so good on much more than just tacos or chips. (Although I kinda have a taco obsession as well) Add to grilled or roasted meats or fish, with eggs any style, top a burger, add to a sandwich for a flavor boost or well, with a spoon straight from the bowl and it`s an extra serving of vegetables. This particular recipe is a perfect combination of guacamole & tangy tomatillo salsa verde. Make it mild or hot depending on your spice tolerance, either way you`ll be glad you did.
Here`s what you`ll need for your Taqueria Style Creamy Avocado Salsa:
Tomatillos-8-10, husks removed & washed
Avocado-1/2-1 depending how thick you want the consistency
Serrano Chiles-1-3 depending on your heat tolerance or want
Onion-1/4 medium size
Garlic-2 cloves peeled
Cilantro- small bunch
Lime- 1 large or 2 small
Salt to tasteA look at the players.Remove the husks from the tomatillos & wash well to remove that sticky coating.Add the tomatillo`s, onion, garlic & chiles to a sauce pan & cover with water. Remove the stems from the serrano`s & the seeds if you want less heat. I love spicy so I left`em. Bring to a boil, reduce to a simmer & cook about 10 minutes. The tomatillo`s will change color from bright green to dull greenish yellow.Use a slotted spoon & transfer to a blender cup.Add in the cilantro, avocado (I used 1/2), lime juice & a teaspoon of salt. Blend until smooth. Taste and adjust the seasoning. Add more lime if needed. Blend again. That`s it. You`re going to love this!! Serve & enjoy your Taqueria Style Creamy Avocado Salsa!!
