Most days in my little Chile and Salt kitchen I`m really trying to eat healthier, watch the saturated fat, sugars, incorporate more veggies etc, etc, etc, blah, blah, blah but every once in awhile you just need to get your fry on. This simple man`s plan today is exactly that in the form of Southern Fried Petite Lamb Chops. Deep fried lamb chops you say, what??? These might be the all time best, make you go weak in the knees, crazy good lamb chops you`ll ever have. A perfect marriage of 2 of my all time favorite foods, fried chicken & lamb. Spicy & crispy on the outside, perfectly tender & juicy on the inside & super simple to make. You really need these in your life!
Here`s what you`ll need for your Southern Fried Petite Lamb Chops:
Rack of Lamb-chops separated
Flour- 2 cups
Salt- 2 Tablespoons
Garlic Powder- 1 Tablespoon
Onion Powder- 1 Tablespoon
White Pepper- 2 Teaspoons
Cayenne Pepper- 1-2 Teaspoons
Italian Seasoning- 2 Teaspoons
Milk- 1 cup
Oil for FryingSouthern Fried Lamb Chops1The main players.Southern Fried Lamb Chops2Using a sharp knife separate the chops. These are pretty aren`t they!!Southern Fried Lamb Chops3In a bowl add the flour, salt & spices.Southern Fried Lamb Chops4Mix until well & evenly combined. In another bowl add a cup or so of milk.Southern Fried Lamb Chops5Working one at a time dredge the chops in your seasoned flour mix coating both sides. Shake of any excess.Southern Fried Lamb Chops7Next the floured chops get a quick milk bath. Submerge completely or turn to coat.Southern Fried Lamb Chops6Add the lamb back into the seasoned flour & dredge a second time. Southern Fried Lamb Chops8Remove to a plate & continue the process with the remaining chops. Refrigerate for 10-15 minutes.Southern Fried Lamb Chops9In a deep skillet or Dutch oven heat an inch and a half or so of oil over medium-medium high heat. Heat to 350 degrees. Working in batches fry your lamb chops turning after 2-3 minutes. Cook another couple of minutes until golden brown & beautiful.Southern Fried Lamb Chops10Remove to a paper towel lined plate & finish cooking the remaining chops.

Ingredients

  • Rack of Lamb-chops separated

  • Cayenne Pepper- 1-2 Teaspoons
  • Italian Seasoning- 2 Teaspoons
  • Milk- 1 cup
  • Oil for Frying

Instructions

  1. Using a sharp knife separate the chops.
  2. In a bowl add the flour, salt & spices. Mix until well & evenly combined.
  3. In another bowl add a cup or so of milk.
  4. Working one at a time dredge the chops in your seasoned flour mix coating both sides. Shake of any excess.
  5. Next the floured chops get a quick milk bath. Submerge completely or turn to coat.
  6. Add the lamb back into the seasoned flour & dredge a second time.
  7. Remove to a plate & continue the process with the remaining chops.
  8. Refrigerate for 10-15 minutes.
