Here`s all you need for your Simply The Best Balsamic Roasted Pork Loin:
Pork Tenderloin- 2, about 1-1 1/2lbs each
Olive oil- 1/4 cup
Balsamic Vinegar- 1/4 cup
Steak Seasoning Blend (Like Montreal or your favorite)- 2 Tablespoons
Garlic- 3-4 cloves peeledYou`re looking at everything you need right here. How easy is this!
Start with the marinade. Add the olive oil, balsamic, steak seasoning & garlic cloves to a blender cup & give it a good blitz.Add the tenderloins to a heavy duty plastic bag or nonreactive dish. I love Ziplock freezer bags for this.Add the marinade & evenly coat. Get in there & massage that flavor into the meat. If using a freezer bag squeeze as much air out as possible & seal. Refrigerate & let marinate at least 4 hours but overnight is better.When you`re ready remove the pork from the marinade & let come to room temperature. Discard any remaining marinade.Preheat your oven to 425 degrees. Line a baking tray with foil for easier clean up & set a baking rack on the tray. Add the tenderloins to the rack. (If you don`t have a rack no worries. Lightly grease the foil or give it a quick hit of cooking spray & add the pork.)Roast for about 25 minutes or until an internal temperature of 140 degrees is reached at it`s thickest point. As with just about any roasted or grilled meat this step is SUPER important. Remove the pork from the rack to a plate & tent with foil. Let it rest 10-15 minutes before slicing. You don`t want all that lovely juice running out on your cutting board. You want it running down your throat!
