Simply Amazing Easy Smoked Tomatoes are what`s cook`in in this simple man`s plan today. Something pretty magical happens when you add a little heat & smoke to the common tomato. The natural sugars begin to caramelize turning them super sweet & the combination is dream worthy. These are so versatile to use in so many different ways, an incredible side dish to accompany grilled meats or fish, add to soups or stews for additional layers of flavor, use in a vinaigrette for your next salad, with eggs in omelets or quiches etc. etc. etc. I think you get the picture.
Here`s what you`ll need for your Simply Amazing Easy Smoked Tomatoes:
Wood Chips-Hickory, Apple, Mesquite, Oak
Tomatoes- I`m using Roma`s but any type will work
Herbs of your choice-optionalA look at the stars.Slice your tomatoes in half lengthwise, remove the core & deseed.
Light your grill. If using a charcoal bbq place your charcoal on one side & light. They`ll be ready when covered in grey ash. If yours is gas ignite one side. Soak your wood chips in water for a few minutes.When the grill is ready put your tomatoes cut side up on the opposite side as your fire. If using charcoal add a handful of the wood chips to the coals and shut the lid. If yours is gas add some of the wood chips to an aluminum pie plate & place directly over the flame, again shut the lid. The smoke will start billowing shorty. When it subsides add another handful of chips & repeat. I like to do this 3 times but that`s just me. For less smokiness do it once or twice, for more repeat until you`re happy.Remove from the grill & you`re ready. The edges will just start to brown & the skin will shrivel a bit. If serving as a side dish serve as is. If using in a dressing, soup or stew I like to remove the skins. They`ll just slide off.Used in my Roasted Duck Ragu.Or my Smoked Tomato Rosemary Bisque.
