Before we get started I`m going to come right out & say it, this might be the best chicken dish I`ve ever tasted, ever!!! So good I made it two nights in a row which never happens.  I mean it`s rare for me to repeat a recipe in a month but this is so worth it. Chicken, oven braised with lemon, olives & spices results in tender, moist, melt in your mouth goodness that`s so delectable it`s almost beyond description. I know, that`s a big statement for the humble chicken but I`m standing by it. Really pretty amazing when such basic ingredients come together so easily to equal a sum so infinitely greater than their respective parts. As an added benefit the recipe is also gluten free, dairy free,  low carb & low calorie for anyone with dietary restrictions or concerns. All that being said this simple man`s plan to healthier eating today comes in the form of Sicilian Braised Chicken with Olives & Lemon. I served this at a small dinner party paired with my Crispy Duck Fat Potatoes & Brussel Sprouts w/Bacon & Cranberries to rave reviews. The whole thing really worked so well.Braised Chicken with Olives & Lemon8Here`s what you`ll need for your Sicilian Braised Chicken with Olives & Lemon:
Serves 4
Chicken- 1 Cut in 8 pieces bone in skin on.
Lemons-2 quartered
Olives- 1 cup each Kalamata`s & Castelvetrano or other green olive
Chicken Stock-1 cup
Onion- 1 sliced
Rosemary-1 Tablespoon chopped
Crushed Red Pepper- 1 Tablespoon
Fennel Seed- 1 Tablespoon crushed
Olive Oil-2 Tablespoons
Sage- 1 small bunch roughly chopped
Garlic- 8-10 cloves peeled

Preheat your oven to 375 degrees.Braised Chicken with Olives & Lemon3Slice the onion and add to a baking dish in a single layer making a bed so to speak.Braised Chicken with Olives & Lemon4Place the chicken pieces on the sliced onion & drizzle with olive oil. Rub to evenly coat. Season generously with salt & pepper. Sprinkle the crushed red pepper, fennel seed, rosemary & sage over the top. Add the garlic cloves, tucking them in here & there. It may seem like a lot of garlic but these little babies are going to roast & mellow adding such great flavor.Braised Chicken with Olives & Lemon5Now add the quartered lemons. Briny, salty little bites with so much punch!  Cover tightly with aluminum foil & put back into the oven for about an hour. Your kitchen is smelling pretty incredible now!
