You ever have those days when you don`t have a clue what`s for dinner but want something quick, easy & delicious. Well that`s me pretty often & this is exactly what this simple man`s plan for healthier eating has for you today! Shrimp Sweet Corn & Tomato Pasta,6 main ingredients & on the table in 20 minutes. Really, what more can you ask for.
Here`s what you`ll need:
Pasta- 100 grams per person, I used spaghetti but use what you like.
Shrimp- 6-8 per person shelled & deveined
Tomatoes- 1/2 cup per person
Sweet Corn- 1/4 cup per person
Garlic-1-2 cloves minced
Basil- chiffonade or thinly sliced
Red Pepper Flakes (optional)
Bring a large pot of salted water to a boil & cook the pasta according to the directions.
Heat a good splash of olive oil in a saute pan over medium high heat, add the garlic, a bit of salt & pepper & a pinch of red pepper. Give a stir & cook about 30 seconds.
Add in the sweet corn, stir & cook for a minute or 2.
Toss in the tomatoes & cook for another minute or so.
In go the shrimp.
These are going to cook fast, 1-2 minutes per side.
Drain the pasta & add to the skillet. Add some of the basil, reserving a bit to garnish.
Stir or toss & cook for another minute or so.
