Shrimp Spanish Chorizo Bitter Greens & Creamy Polenta is this simple man`s plan for better eating today. Really, how can you go wrong, juicy shrimp, spicy chorizo, some wilted bitter greens served on a bed of creamy cheesy polenta. A ton of flavor, contrasting textures, warm & comforting & on the table in under 30 minutes. A perfect week night meal & totally company worthy. Sounds kind of perfect to me!
Here`s what you`ll need for your Shrimp Spanish Chorizo Bitter Greens & Creamy Polenta:
Shrimp-peeled & deveined, I used 21-25 count, about 6 per person.
Spanish Chorizo- diced, 1-2 oz per person
Greens- 1 cup per person chopped. I used arugula & chicory but anything will work.
Tomatoes- cherry or tear drop
Garlic-1 clove minced
Olive oil & butter
Blackened Seasoning-1-2 teaspoons
Polenta- 2 oz per person
Chicken Stock or water- 6 oz per serving of polenta
Milk-2 oz per serving of polenta
Cheddar Cheese- grated, 1/4 cup per serving
Green Onion or Chives-sliced thin for garnishA quick look at the main players.
Greens chopped, chorizo diced, shrimp shelled & deveined, green onion sliced & we`re ready to go.
Heat the chicken stock & milk in a medium sauce pan to a boil. Add the polenta in a slow stream stirring. We don`t want lumps! Cook according to the directions stirring occasionally. Add the cheese & stir until melted, incorporated & smooth. Cover & keep warm.
Heat a skillet over medium high heat & add a splash of olive oil & a bit of butter.
Add the chorizo, give a stir & cook for a minute or two.
Add the garlic & stir.
Next go the tomatoes. Give a stir & cook for a minute or so.
Add the shrimp. These are going to cook really fast so don`t go anywhere. Season with your blackened spice mix.So close now.
Add the bitter greens & give a stir. Cook 1-2 minutes until wilted.
Ready to plate.
Spoon some of the polenta onto the plate or bowl. Top with the shrimp, chorizo & greens. Garnish with a few green onions.
