Roasted Sweet Corn, Black Bean & Bell Pepper Relish

Ok, so here is a super easy, super fast, super good side dish to accompany your next BBQ. As some of you know it`s hot here in cabo land soRoasted Corn Salsa anything I can do to stay out of or not heat the kitchen more than possible is a huge plus.

Roasted Sweet Corn, Black Bean & Bell Pepper Relish
1 20 oz. Can Black Beans Drained & Rinsed (or about 2 cups if you made your own)
2 Ears Sweet Corn or 1 Can Drained
1 red Bell Pepper Chopped Finely (about the same size as a corn kernel)
1/2 Bunch Cilantro Chopped Finely
Juice of 1/2 Lime
2 Tsp Ground Cumin
Salt & Pepper To Taste
If using fresh corn go ahead and throw them on the grill for a few minutes to get a roast & some color going. If the grill isn’t fired up or using canned corn not a problem. Cut corn from the cobb or drain the can well. Heat a skillet until hot and lightly grease or give a quick spray of pam. Add corn and pan roast for a few minutes, remove from heat & cool. Mix Beans, Corn, Cilantro & Bell Pepper. Add Cumin, Lime Juice & give a quick mix. Check and adjust seasoning as needed. Chill for at least a 1/2 hour to let the flavors blend. Serve & Enjoy
