Roasted Jalapeño Cilantro & Avocado Hummus

Are you ready for something spicy, creamy, savory, incredibly healthy and absolutely delicious? Oh, and ready in 15 minutes. If this sounds like a good start then let`s go. What I`m talking about here is Roasted Jalapeño Cilantro & Avocado Hummus. The base of this dish is Garbanzo Beans or Chickpeas. This dish only has a few ingredients and comes together super easy and super fast. In addition this recipe can be used in a variety of different ways, as a dip with chips or veggies, a sandwich spread in place of mayo, a great condiment for tacos etc. Use your imagination and be delighted.

Here`s what you need.
1 15oz Can Garbanzo Beans Drained & Rinsed
2 Jalapeños Roasted, Peeled, Deveined & Deseeded (A Poblano Pepper works really well here too)
1-2 Cloves Garlic Minced
1 Small Bunch Cilantro Chopped
1 Avocado Chopped
Juice of 1 Lime, or 2 if Small
2-3 Tablespoon Olive Oil
S & P to Taste
Toasted Pine Nuts, Pumpkin Seeds or Sun Flower Seeds (optional)

 

 

 

 

 

Start roasting your peppers. I did this directly on my gas stove but you can easily do this under your broiler.

Once you get the skin good and blistered place in a paper bag and close or a bowl, container etc and cover. When they`re cool enough to handle rub gently and the skin will come right off. Split the chiles and remove the seeds, the stem and veins.

Now let`s get back to the other ingredients.

 

 

 

 

 

 

The prep for this can be really rough because your going to use your food processor or blender to do the heavy work.

 

 

 

Everything into the food processor and let it do it`s thing. Process until smooth and creamy. You may need to stop and scrape the sides of the bowl a couple of times.

 

 

 

Check and adjust seasoning as needed. Remove to your serving bowl, garnish with some chopped cilantro and nuts if desired and enjoy. Guaranteed it won`t last long.

 

 

The nice thing about this dish is it`s easily adaptable. Want more spice, add more chile or leave the seeds. Love cilantro, add more, you really can`t go wrong.
