Here`s what you`ll need for your Quinoa Sprout & Bell Pepper Salad:
Quinoa- 1 1/2 cups cooked to directions, chilled
Sprouts- 1/2 cup chopped (I used alfalfa but whatever you like)
Green Onion- 1/4 cup sliced thinly
Red Bell Pepper- 1/2 small dice
Mint- a few leaves finely chopped
Celery- 1/4 cup small dice
Cilantro- 1/4 cup finely chopped
Lemon- 1 juiced & zested
Olive Oil- 1-2 tablespoonsA look at the veggies & herbs.
Cook the quinoa as directed & chill completely.
Prep the veggies & herbs.
Zest & juice the lemon.
Combine all ingredients and mix well.
