Ok, after this post I`m going to slow down with the pork recipes, I promise. Admittedly I`ve gotten a little carried away lately with my piggy love but there could be worse things right. It`s just that I find myself forever drawn to the swine section of my butcher or grocery & inevitably end up with something in my cart or basket. What`s one to do, some things are just too good to pass up. So now that I`ve gotten my brief apology out of the way (actually I`ll never really apologize for pork), what I have for you today is a great choice for any busy weeknight dinner. It`s fast, super flavorful & super easy to throw together. Nothing not to like here. This simple man`s plan to healthier eating is coming to you today with Quick Lemon Rosemary Grilled Pork Chops.
Just a little side note but lemon & rosemary is just such a natural flavor combo that`s hard to beat. Add to chicken (Sicilian Braised Chicken with Olives & Lemon), fish, pasta or just about anything else you can think of for an easy taste booster.
Here`s all you need for your Quick Lemon Rosemary Grilled Pork Chops:
Pork Chops-4 about 3/4-1 inch thick (bone in for more flavor)
Olive Oil- 1/4 cup
Rosemary- a couple of sprigs
Lemons- 2 juiced & zested
Garlic- 1-2 cloves
Crushed Red Pepper- 1 teaspoon (optional)

.This marinade is so quick & easy, I love my blender! Add the lemon juice & zest, garlic, olive oil, rosemary & crushed red pepper to your blender cup & give it a good whirl.Blend well, until the oil has emulsified.Season the chops well with sea salt & freshly ground pepper.Add the chops to a nonreactive dish or sealable plastic bag & pour in the marinade. Turn to evenly coat & massage that pork to try & work in the lemon rosemary mixture. Refrigerate for at least an hour but overnight`s better.Remove from the marinade & grill over medium high heat 4-5 minutes per side or until just cooked through. I like to use a meat thermometer here. Cook until an internal temperature of 145 degrees is reached. Please don`t overcook or they will dry out.Remove to a plate & tent with foil. Let them rest 10 minutes before serving.
