Mexican again, oh yes!!  Well kind of, this simple man`s plan to healthier eating today is Nacho Mama`s Meatloaf…Healthed Up & Mexican Inspired. A spicy twist on a classic recipe I subbed out ground turkey for traditional ground beef, added a little turkey chorizo, used baked corn tortillas & a number of other ingredients commonly found in the Mexican kitchen. The end result was nothing less than outstanding! Packed with a ton of flavor this version is an absolute winner! Here`s what you`ll need for your Nacho Mama`s Meatloaf…Healthed Up & Mexican Inspired:
Ground Turkey- 1 lb
Turkey Chorizo- 6 oz crumbled, casing removed
Onion-1 divided, 3/4 finely diced, 1/4 reserved whole
Poblano Pepper- 1 finely diced, stems & seeds removed
Celery- 2 ribs finely diced
Cilantro-small bunch chopped + more to garnish
Olive Oil- 1 tablespoon
Salsa- 1/2 cup
Sour Cream- 1/4 cup
Eggs-2
Baked Corn Tortillas- 6 crushed in a food processor or blender
Salt- 1 teaspoon
Cayenne- 1 teaspoon
Cumin- 1 teaspoon dried
Coriander- 1 teaspoon dried
Tomatoes- 2
Serrano Pepper-1
Lime-1 juiced
Garlic-3 cloves, 1 minced, 2 unpeeled
Ketchup- 1/4 cup(Heinz is gluten free)
Mustard-1 tablespoon
Brown Sugar- 1 tablespoonMexican Meatloaf2A look at the main players.Mexican Meatloaf3Finely dice the onion, poblano & celery. Mince 1 clove of garlic.Mexican Meatloaf4Heat a saute pan with 1 tablespoon olive oil over medium high heat, add the veggies & garlic, stir & cook 3-4 minutes until just starting to soften. Remove from heat.Mexican MeatloafMexican Meatloaf1 Add the baked tortillas to a food processor & let it do it`s thing.Mexican Meatloaf5In a mixing bowl add the turkey, chorizo, salsa, sour cream, cilantro, eggs, crushed tortillas, veggie mix, cayenne, cumin, coriander & salt. Mix until well combined.Mexican Meatloaf6Give a 9×13 inch baking dish a hit of cooking spray & form your loaf. Cook 45 minutes at 375 degrees.Mexican Meatloaf7Heat a dry skillet over medium high heat. Add the tomatoes, serrano pepper, remaining onion & garlic cloves. Cook until charred & remove from heat. Peel the garlic & add all to a blender cup.Mexican Meatloaf8Add in the ketchup, mustard, lime juice & brown sugar. Puree. You`re ready! Let`s plate! Ingredients

  • Ground Turkey- 1 lb

Instructions

  1. Preheat your oven to 375 degrees.
  2. Finely dice the onion, poblano & celery. Mince 1 clove of garlic.
  3. Heat a saute pan with 1 tablespoon olive oil over medium high heat, add the veggies & garlic, stir & cook 3-4 minutes until just starting to soften. Remove from heat.
  4. Add the baked tortillas to a food processor & let it do it`s thing.
  5. In a mixing bowl add the turkey, chorizo, salsa, sour cream, cilantro, eggs, crushed tortillas, veggie mix, cayenne, cumin, coriander & salt. Mix until well combined.
  6. Give a 9x13 inch baking dish a hit of cooking spray & form your loaf. Cook 45 minutes at 375 degrees.
  7. For the salsa.
  8. Heat a dry skillet over medium high heat. Add the tomatoes, serrano pepper, remaining onion & garlic cloves. Cook until charred & remove from heat. Peel the garlic & add all to a blender cup.
  9. Add in the ketchup, mustard, lime juice & brown sugar.
  10. Puree.
  11. You`re ready! Let`s plate!
  12. Serve the salsa you just made with the meatloaf.
