Oh the simple things in life, even better when they are easy & better yet delicious!! What we have today are steamed Mussels w/Tomatoes Lemon Garlic & White Wine. Add a hunk of good bread to soak up the fabulous broth & a side salad for an amazing dinner in under 30 minutes!!
Here`s what you`ll need:
Mussels- 2 lbs scrubbed & clean
Tomatoes- 1 cup chopped or halved if using cherry or tear drops
Lemon- 2, 1 juiced & 1 sliced
Garlic- 3-4 cloves minced
Onion- 1/2 thinly sliced
White Wine- 1/2 cup

Prepped & ready to go.
Heat a pot over medium high heat & add the wine, lemons, tomato, garlic, onion & parsley.
Add the mussels to the pot, cover and steam for 5-7 minutes until the mussels are open. Discard any that are not.
Remove from the pot to a bowl, done done & done!! Really, how easy was that!
Add some good bread if desired and enjoy!!
