Mini Shrimp Tostada with Roasted Pineapple Habanero Salsa

Need an easy appetizer that is soooo company worthy. Spicy, sweet, salty, and one of my favorites….Shrimp!!! Oh, and they are pretty.

What we have here are Mini Shrimp Tostadas with Roasted Pineapple Habanero Salsa.

If you have the salsa made these come together in under 10 minutes, cooking time for the shrimp included. With that being said, let’s get started so we can eat!!

Here’s what you’ll need:
Tortilla Chips-Home made if you have the time which I didn’t today so I’m using store bought Tostitos Salsa Verde but use any kind you like.
Shrimp shelled, deveined and cut in half lengthwise
Roasted Pineapple Habanero Salsa here
Cilantro chopped for garnish
Olive Oil or Butter
Garlic Minced (optional)
S & P
1) Heat a skillet over medium heat and add your oil or butter and garlic if using.
2) Pat dry and season your shrimp with salt and pepper. Add to the hot pan and cook until they are pretty and pink. This will only take a couple of minutes so don’t go anywhere. Remove from heat.
3)Take a couple of your shrimp and place on your tortilla chip.
4) Top with a bit of the Roasted Pineapple Habanero Salsa.
5)  Garnish with a little of the chopped cilantro and serve. Like I said, it really can’t be any quicker or easier and they are so delicious!!!

Ingredients

  • Tortilla Chips-Home made if you have the time which I didn't today so I'm using store bought Tostitos Salsa Verde but use any kind you like
