It`s said that this dish comes together so fast that Italy`s “lady`s of the night“ could whip up a batch in between clients. Really, I`m not sure if that`s the base or if possibly the insanely wonderful aromas this sauce creates was used to lure customers off the street. Maybe both are true. Whatever the case Meatless Monday Spaghetti alla Puttanesca is this simple man`s plan to healthier eating today.
The ingredients used to flavor this dish, garlic, anchovies, olives, crushed red peppers, capers are big and assertive. Another beautiful thing here are the contrasts: salty olives, anchovies & capers, sweet tomatoes, spicy red peppers & fresh herbs all come together to create an end result that`s nothing less than phenomenal! Super quick & simple to make this is a great weeknight option & oh so tasty!!
Here`s what you’ll need for your Meatless Monday Spaghetti alla Puttanesca:
Tomatoes-1 28 oz can
Yellow Onion- 1 diced
Kalamata Olives- 1/2 cup pitted & chopped
Garlic- 4-6 cloves minced
Crushed Red Peppers- 1 Tablespoon
Capers- 2 Tablespoons
Anchovies- 4 filets
Basil- 1/4 cup chiffonade or thinly sliced
Oregano- 2 Tablespoons chopped
Rosemary- 2 Tablespoons chopped
Vegetable Stock or Water- 1 cup

You can use whole, chopped, pureed or crushed tomatoes here. I had whole so I wanted to break them down. Add them to a blender cup with my crushed red peppers. If you`re using chopped or crushed omit this step.Prep the onion, Kalamata olives & garlic. Chop your herbs.
Heat a splash of olive oil over medium high heat in a large pot. Add the onions, garlic & anchovies. Give a good stir & cook 3-4 minutes. The anchovies will break down & melt into the onions.Add the stock or water, tomatoes, herbs, olives & capers, bring to a boil & reduce heat to a simmer. Cook 20 minutes stirring occasionally. Check for seasoning & adjust to taste. While the sauce is simmering cook your spaghetti as per the directions.
Sauce is cooked & ready.Add your pasta to the pot of sauce, stir well & cook for 3-4 minutes. Ready to eat.
