It`s said that this dish comes together so fast that Italy`s “lady`s of the night“ could whip up a batch in between clients. Really, I`m not sure if that`s the base or if possibly the insanely wonderful aromas  this sauce creates was used to lure customers off the street. Maybe both are true. Tomatoes-1 28 oz can
Yellow Onion- 1 diced
Kalamata Olives- 1/2 cup pitted & chopped
Garlic- 4-6 cloves minced
Crushed Red Peppers- 1 Tablespoon
Capers- 2 Tablespoons
Anchovies- 4 filets
Basil- 1/4 cup chiffonade or thinly sliced
Oregano- 2 Tablespoons chopped
Rosemary- 2 Tablespoons chopped
Vegetable Stock or Water- 1 cup
Olive Oil
S & P
Spaghetti

You can use whole, chopped, pureed or crushed tomatoes here. I had whole so I wanted to break them down. Add them to a blender cup with my crushed red peppers. Heat a splash of olive oil over medium high heat in a large pot. Add the onions, garlic & anchovies. Give a good stir & cook 3-4 minutes. The anchovies will break down & melt into the onions.Puttanesca Pasta5Add the stock or water, tomatoes, herbs, olives & capers, bring to a boil & reduce heat to a simmer. Cook 20 minutes stirring occasionally. Check for seasoning & adjust to taste. While the sauce is simmering cook your spaghetti as per the directions.Puttanesca Pasta6
