Low Carb Italian Sausage Zucchini Boats

Low Carb Italian Sausage Zucchini Boats are what`s on this simple man`s plan to better eating`s menu today. You`re going to love these babies, I mean spicy Italian sausage, a touch of fresh basil,  beautiful marinara sauce, grated parmesan all delivered by way of a hollowed out zucchini. Super easy, 5 main ingredients, and incredibly delicious, what more can you ask for! Here`s what you`ll need for your Low Carb Italian Sausage Zucchini Boats :
Zucchini- sliced lengthwise & hollowed out a bit
Italian Sausage- casing removed, broken up & browned
Marinara Sauce-1 1/2 cups, or your favorite red sauce
Basil-1/2 cup sliced thin or chiffonade
Parmesan Cheese- 1 cup gratedZucchini 1RA quick look at the players.

Cut your zucchini in half lengthwise. Using a spoon hollow out the halves a bit.

Grate the parmesan & slice the basil.

Heat a skillet over medium high heat & thoroughly brown the sausage. Once browned drain any excess grease.Add in the marinara sauce & give a stir.

Add 1/2 your basil, stir & cook 3-4 minutes.

Salt & pepper the zucchini halves,

Add a little parm to the bottom of your zucchini boats.

Mound the sausage mixture in the boats.

Top with the remaining parm. Preheat your oven to 400 degrees. Bake for 30 minutes. Plate or platter your  Low Carb Italian Sausage Zucchini Boats, garnish with the remaining fresh basil & enjoy!!
