S & P to taste
.Prep the veggies.Dice the chicken in small bite size pieces.Heat a tablespoon olive oil over medium high heat in a heavy bottomed soup pot or Dutch oven. When hot add the carrots, celery & onion. Stir & cook 6-8 minutes.Add the chicken stock & Bay leaves.Add the diced chicken, bring to a boil & reduce heat to simmer & cook 20 minutes. You`re almost ready. Taste & adjust seasoning, stir in the zoodles (zucchini noodles) & serve. You don`t want to add them until just before serving as they will turn to really soft quickly We want them to keep their structural integrity & texture.
