This simple man`s plan to healthier eating today is Low Carb Chicken Zoodle Soup. Everything that cozy bowl of classic chicken noodle has going for it but healthed up a bit by replacing the traditional noodles with zoodles or zucchini noodles. We can all use a few more veggies right & this is a great answer. Super delicious, super easy, super healthy, low fat, low calorie & of course low carb & ready in about 30 minutes this recipe can`t be beat.
Here`s what you`ll need for your Low Carb Chicken Zoodle Soup:
Chicken- 1 lb boneless skinless breasts diced small
Chicken Stock-6 cups
Carrots-1 cup chopped
Celery-1 cup chopped
Onion- 3/4 cup diced
Zucchini- 1 cup ribbons, I just use a vegetable peeler for this as I don`t have a spiralizer.
Bay Leaves-2
Olive Oil

.Prep the veggies.Chicken Zoodle Soup1Dice the chicken in small bite size pieces.Chicken Zoodle Soup3Heat a tablespoon olive oil over medium high heat in a heavy bottomed soup pot or Dutch oven. When hot add the carrots, celery & onion. Stir & cook 6-8 minutes.Chicken Zoodle Soup4Add the chicken stock & Bay leaves.Chicken Zoodle Soup5Add the diced chicken, bring to a boil & reduce heat to simmer & cook 20 minutes.Chicken Zoodle Soup6You`re almost ready. Taste & adjust seasoning, stir in the zoodles (zucchini noodles) & serve. You don`t want to add them until just before serving as they will turn to really soft quickly We want them to keep their structural integrity & texture.
