Hmm, the beloved potato, by themselves they`re pretty awesome, add a few extra ingredients & they become almost magical! Loaded Smashed Potato Cakes are this simple man`s plan to better eating today. Crispy & crunchy on the outside, soft & dreamy on the inside with bacon, green onions & cheese it`s tough to go wrong here. Here`s what you`ll need for your Loaded Smashed Potato Cakes:
Potatoes-2 medium, peeled & roughly chopped
Bacon- 4 pieces diced & crispy
Green Onions- 1/4 cup thinly sliced
Cheese-1/4 cup grated (I used Monterey Jack)
Butter-1-2 Tablespoons
Sour Cream-1-2 Tablespoons
Garlic Powder-1 teaspoon
Panko Bread Crumbs Peel & chop the potatoes.Add the potatoes to a medium sauce pan with generously salted water, bring to a boil & cook 20-25 minutes until soft & fork tender. Preheat your oven to 400 degrees.Heat a skillet over medium high heat, add the diced bacon & cook until crisp. Remove to paper towels to drain any excess grease.Grate your cheese & slice the onions.When the potatoes have cooked drain & add to a mixing bowl. Add the butter, sour cream, bacon, cheese, green onion, garlic powder & a bit of salt & pepper.Give it a good mash & mix.Line a baking sheet with parchment paper. Using a ring mold add a little of the bread crumbs on the bottom. (If you don`t have a ring mold you can use a can with both ends open.)Spoon some of the potato mixture into the mold pressing down slightly. Top with another bit of the bread crumbs.Remove the mold & repeat with the remaining potato mixture.Bake 20 minutes or so, remove, plate & enjoy your Loaded Smashed Potato Cakes!
