Is there anything more comforting than a nice plate of  pasta? Not really in my humble opinion. No matter how you dress it, a little olive oil & garlic to a creamy Alfredo to a meaty Bolognese to a bold in your face spicy Puttanesca there are just no losers. With that said this simple man`s plan to better eating today comes in the form of Linguine with Roasted Chicken Broccoli Walnuts & Goat Cheese. We`re elevating simple linguine (or your choice of pasta) from ordinary to extraordinary with the addition of a few simple ingredients you very well already have in your fridge & pantry. Better yet this dish comes together in about 30 minutes making it perfect for a weeknight dinner but elegant enough to serve any guest. You just can`t go wrong.
Here`s what you`ll need for your Linguine with Roasted Chicken Broccoli Walnuts & Goat Cheese:
Serves 4
Chicken- 2 cups, I used leftover roasted chicken but dice & saute a couple of cups in a little olive oil if you prefer.
Broccoli Florets- 2-3 cups
Walnuts- 1/2 cup toasted
Goat Cheese- 4oz
Chicken Stock- 1 1/2 cups
Crushed Red Pepper- 1 teaspoon
White Balsamic Vinegar- 2 Tablespoons
Roasted Garlic-2 heads
Cream- 1/2 cup
Linguine Pasta -12 oz
Parmesan Cheese- 2 oz grated

Remove from heat & set aside. Be a little careful not to burn or they`ll turn bitter on you. Meanwhile fill a large pot with salted water, bring to a boil & cook your pasta to al dente according to the directions. linguinie with roasted chicken3Add the chicken stock to a skillet over medium heat. Squeeze the Roasted Garlic into the stock & stir to incorporate. This adds such a mellow garlicy background flavor to your sauce.linguinie with roasted chicken4Add the chicken, white balsamic vinegar & crushed red pepper. Give a good stir.linguinie with roasted chicken5Add your cream & bring to a simmer for 2-3 minutes.linguinie with roasted chicken6Now goes the broccoli. Stir & simmer 2 more minutes. Taste your sauce & adjust the seasoning as needed. Too your chicken-broccoli mixture add the drained linguine, mix well & continue to cook for a couple of minutes longer. The pasta noodles are going to absorb most of that creamy deliciousness. Time to plate.

Serve & finish your dish by sprinkling the toasted walnuts over the top followed by some crumbled goat cheese & grated parmesan. Serve immediately. The goat cheese is going to melt into the dish giving it a perfect tang while the nuts add another element of flavor & crunch. All combined with the great combination of chicken & broccoli what you have here is nothing less than a concert for your mouth.

Ingredients

  • Serves 4
