Left Over Steak: Absolutely Delicious Beef Stroganoff is what`s on this simple man`s plan to healthier eating today. Basic ingredients, quick prep & amazing flavor, what more can you ask for! Yep, on the table in under 30 minutes!
Here`s what you`ll need:
Beef- 1 1/2 lbs, sliced thin across the grain. As the title says I`m using left overs but use raw for an amazing 1st time around dish. (You`ll want the left overs) New York, sirloin, hanger, what ever cut you prefer. If using a less expensive cut allow more simmering time to tender up.
Onion- 1 diced
Mushrooms- 8oz sliced
Garlic-1-2 cloves minced
Butter & Olive Oil-1 Tablespoon each
Flour- 1 heaping Tablespoon
Thyme- 1 teaspoon dried or a few sprigs fresh
Red Wine- 3/4 cup
Beef Stock-2 cups
Worcestershire Sauce-a splash
Dijon Mustard-1 Tablespoon
Sour Cream-3/4 cup
Slice your beef across the grain, about 1/4 inch thick.Dice your onion.Slice the mushrooms.Heat butter & olive oil in a large skillet over medium high heat & add the beef. Season with a little S & P.
Cook until browned & remove from the pan using a slotted spoon leaving the juice behind.
Add the mushrooms, onions, thyme & garlic. Cook 3-4 minutes stirring occasionally.
Add the flour, stir & cook 2-3 minutes. We want to cook out that raw taste.
Add the red wine, stir & cook for a minute or two.
Add the beef stock, Worcestershire sauce & mustard. Stir & add the beef back in with any accumulated juices.
Cover & bring to a simmer. Cook 10 minutes.
Add the sour cream & cook 2 minutes.
