So kale has been on everyone’s hot list for awhile now and I have to admit I’ve been won over as well. Here is a great easy side dish that would pair well with chicken, any grilled meat or meatier fish. And well, it has bacon so what more do I really have to say!!
Here`s what you’ll need:
3-4 Slices Bacon Chopped
1/2 Red Onion Minced
2 Cloves Garlic MInced
1 ounce Pine Nuts Toasted
6-8 Cups Kale Chopped

Heat your skillet over medium heat and add bacon. Cook until crisp, remove to paper towels leaving about 1 Tbsp bacon grease in the pan.
Add red onion and cook until it begins to brown. Add garlic and cook for a minute or so more. Add Kale and stir until wilted. This will really only take a minute or two but may need to be done in steps depending on the size of your pan.
Add 1/2 of the bacon and 1/2 of the pine nuts. Check seasoning and adjust to taste. Plate and finish with the remaining bacon and pine nuts.
