So I`m not really sure what category this falls into other than just amazeballs whether it be a condiment, add in, side dish or entrée but I`m leaning towards entrée. I mean anything you just start eating with a spoon or fork can be a main course right. This simple man`s plan to better eating today is Jammin Bacon Jam. I`ll typically sign up for anything bacon related but this is just over the top good. A little sweet, a little spice, a lot rich & just pure bacony goodness! The possibilities here are pretty limitless. Add to a burger, with eggs or a crostini which I did here, to your next BLT as the B portion, stir into the next batch of mac-n-cheese, serve with crackers or like I said before just grab a spoon. This is a really great addition for your next festive occasion, party or game day eats. Whatever you decide you just can`t go wrong.
Here`s what you`ll need for your Jammin Bacon Jam:
Bacon- 1 lb chopped
Red Onion- 2 medium, diced
Brown Sugar- 1/4 cup
Cayenne Pepper- 1/2 tablespoon depending on your spice wants
Black Pepper- 1 teaspoon
Sherry Vinegar- 1/4 cup
Fresh Thyme- 1 tablespoon
Water- 3/4 cupA quick look at the players.Start by chopping your bacon.Dice your onion.Heat a heavy bottomed pot or Dutch oven over medium high heat & add the bacon. Cook until browned & crispy.Remove to paper towels to drain.Discard or save for another use all but about a tablespoon of the bacon grease. Add the onions, stir & cook 5-7 minutes until soft.Add the cooked bacon, thyme, cayenne pepper, black pepper, sherry vinegar, brown sugar & water to the onions & reduce the heat to medium. Cook stirring regularly until most of the liquid has evaporated & the mixture has thickened. About 10 minutes.Transfer the mixture to a food processor & pulse a few times.Ready to go, serve warm or at room temperature.
