Jalapeño Cilantro Cream

19 Oct

Creamy, slightly spicy, fresh, delicious & comforting all in under 30 minutes. That`s how I would describe this recipe. Jalapeño Cilantro Cream is what I`m talking about here. This is such a fabulous versatile sauce to use on chicken, fish or even with pasta.

Here`s all you`ll need.

Start with these simple basics: Jalapeños, a couple of shallots, garlic and cilantro. Seed and devein your chiles, then give a super rough chop. Don’t worry because your food processor is going to do the work.

Add the chiles, shallots, cilantro & garlic to your processor and let it do it’s thing.

Heat a tablespoon of butter or olive oil over medium heat and add the jalapeño cilantro mix to the pan. Give a stir and cook for a couple of minutes..

Add a tablespoon of flour, give another good stir and cook for another minute or two. We want to get that raw flour taste cooked out.

Now we are going to add  milk a little at a time and continue to stir. We don’t want any nasty lumps here. Bring to a simmer and this beautiful sauce is born. It will thicken quickly so watch it and remove from heat. Season to taste with salt and pepper and you are ready to wow.
