Italian Inspired Chopped Salad

Italian Inspired Chopped Salad, that`s this simple man`s plan for better eating today. This makes for a great lunch or lite dinner & comes together in about 10 minutes with a little forethought. By that I mean I cooked a little extra chicken last night when I was making my Mushroom Chicken Piccata. Everything else just needs to be cut up & tossed in a bowl. Done done & done.
Here`s what you`ll need:
Iceberg Lettuce-1 cup per person, 1/2 inch chop
Chicken-cooked, 1/2 inch dice, 2oz per person
Salami- 1/2 inch dice, 2 oz per person
Fresh Mozzarella-1/2 inch pieces, 1 oz per person
Provolone-1/2 inch, 1 oz per person
Tomato-1/2 diced, 1/4 cup per person
Garbanzo Beans-1oz per person
Chives or Green Onion-sliced thin, 1-2 Tbl per person
Fresh Basil- sliced thin, 2 Tbl per person
Parmesan-shaved
Italian Dressing
White Wine Vinegar- 3 Tbl
Olive Oil- 1/4 cup
Dijon Mustard-1 Tbl
Lemon Juice-1 -2 Tbl
Garlic-1-2 cloves minced
Basil & Oregano-dried, 1/2 Tsp each

Add the dressing ingredients to a jar & shake. Add the salad ingredients to a bowl & toss with a bit of the dressing. Garnish with a little parmesan.

Instructions

  1. Chop and prep the salad ingredients.
  2. Add the dressing ingredients to a jar & shake.
  3. Add the salad ingredients to a bowl & toss with a bit of the dressing.
  4. Plate & garnish with a bit of parmesan.
  5. Enjoy!!
