Herbalicious Italian Wedding Soup is this simple man`s plan for healthier eating today. This is pretty much a bowl of warm Italian comfort. Tender chicken meatballs, fresh herbs, assorted vegetables & a sprinkling of good parmesan, I mean come on, what`s not to like here. One taste & you`ll know you have something special.
Here`s what you`ll need for perfect Herbalicious Italian Wedding Soup :
Chicken-1 lb boneless, skinless breast
Parsley- 1/2 cup fresh loosely packed
Mint-1/4 cup fresh loosely packed
Basil-1/4 cup fresh loosely packed
Oregano-1/4 cup fresh loosely packed
Egg-1
Bread Crumbs-1/4 cup
Garlic-2 cloves peeled, minced
Spinach-3 cups chopped
Carrot- 1 cup
Celery- 1 cup
Onion-1 cup
Chicken Stock- 8 cups
Orzo Pasta- 1 cup
Parmesan Cheese
Olive Oil

A quick look at the players. Prep the carrots, celery, onion & spinach.

Let`s start with the meatballs. Cut the chicken breast in pieces & add to a food processor. Salt & pepper.Ital3

Add 1/2 of your fresh herbs.

Add in the egg, bread crumbs, garlic & 1/2 cup grated parmesan.

Process until chopped & well mixed.

Heat a splash of olive oil over medium high heat in a large soup or stock pot. Add the carrots, celery & onion, stir & cook 5-6 minutes until just beginning to soften.

Add the chicken stock, increase heat & bring to a boil.

Make your meatballs, a little smaller than a golf ball is perfect. Keep a bowl of water to wet your hands in between the meatballs. Trust me, it`ll keep them from sticking.

Drop the meatballs gently into the broth. Reduce heat to a simmer & cook 10 minutes.

Add the spinach & remaining herbs.

Add the orzo stir & simmer  10 more minutes.
