Hearty Lentil & Italian Sausage Soup is this simple man`s plan for healthier eating today! Comforting, creamy, absolutely delicious & perfect for these chilly days & nights. Serve with a hunk of good bread & your set: Here`s what you`ll need:
Olive Oil & Butter- 1 Tbls each
1 lb Spicy Italian Sausage
Celery- 1 cup diced
Carrots- 1 cup diced
Onion- 1 cup diced
Leeks- 1/2 cup thinly sliced
Lentils- 1 1/2 cups
Chicken Stock- 1 1/2 quarts
Heavy Cream- 1 cup
Dijon Mustard- 1 Tbls
Red Wine Vinegar- 2 Tbls
Fresh Spinach- 2 cups chopped
Salt & Pepper to taste
Parmesan to garnish
Prep the veggies.
Heat a stock pot over medium high heat & brown the sausage breaking it up into small pieces. Remove from the pot using a slotted spoon leaving any juicy yumminess behind.
Add the carrots, celery, onion & leeks stir and cook 4-5 minutes.
Add the chicken stock & lentils, increase the heat to high & bring to a boil stirring occasionally so the lentils don`t stick. Cover, reduce heat to low & simmer 45 minutes until the lentils are cooked.
Stir in the mustard, red wine vinegar, cream, spinach & sausage. Bring back to a simmer & cook 15 minutes.
Season to taste with salt & pepper.
Remove to bowls & garnish with some shaved or grated parmesan.
