Grilled Drunken Cajun Shrimp

 

Is anyone else out there a bonafide  shrimpoholic? I know I am! Lobster, sure if it`s in front of me I`m going to enjoy it but honestly I`ll take a plate full of plump juicy shrimp 1st. Hot or cold, poached, steamed, sautéed or my absolute favorite, grilled, I just lovèm! I`m guessing you know where this simple man`s going today. What I have are Grilled Drunken Cajun Shrimp. Peeled & deveined these beauties are seasoned with my Blackened Seasoning Recipe (or any Cajun spice blend you like) given a good soak in your favorite beer & then quickly grilled to perfection. Incredibly easy to prepare the only way I can describe these are pure yum! Guaranteed they`re going to become a regular when you fire up that BBQ.  

Here`s what you`ll need for your Grilled Drunken Cajun Shrimp:
Serves 4-6
Large Shrimp- 2lbs Peeled & Deveined (I used 21-25 count)
Bamboo or Wooden Skewers
Blackened Seasoning or Your Favorite Cajun Spice- 1-2 Tablespoons
Beer- 1 bottle of your favorite but I recommend a lager.Start by soaking the skewers in water for about 30 minutes. They won`t catch on fire & burn up this way. Peel & devein your shrimp. I almost always have a bag of flash frozen shrimp in my freezer. They`re so convenient & come already peeled but with the tails still on. The vein or digestive tract has typically already been removed as well so basically just defrost in a bowl of water (it only takes 5-10 minutes) & you`re ready to roll. By the way 98% of the shrimp you buy at the store or seafood provider has been previously frozen & defrosted. You just don`t know for how long so do it yourself.
Thread your prawns onto the skewers. I used 10 inch skewers & threaded 6 to a skewer.

Season with about half of the spice blend & refrigerate for 30 minutes or so.Set the skewers in a rimmed dish or baking sheet in a single layer & add your beer. Turn the shrimp to coat & refrigerate to marinade another 30 minutes. Start your charcoal or  turn on your grill to preheat. You`ll be looking for a medium high flame or heat. Remove from the cerveza marinade & season with the remaining spice mix. These stars are 3-4 minutes from ready to eat. Lightly oil the grill rack. Add the skewers & don`t go anywhere. They are going to cook super fast. Grill for a mere 1 1/2-2 minutes per side until just cooked through. It`d be a travesty to overcook & dry these lovelies out. Remove from heat & serve immediately.
