You ever need an entrée that sounds all fancy and stuff, looks pretty on the plate, tastes amazing but you only have a few minutes to pull it all together & no time to make it to the store? Somehow it seems to happen kinda often at my house for no real apparent reason. Todays simple man`s plan to better eating might just fit the bill in the form of Goat Cheese Stuffed Chicken Breasts with Blackberries & Balsamic. Juicy chicken, tangy goat cheese, & a tart sweet combination of blackberries & balsamic vinegar come together to form a total flavor explosion with every bite. This concept is also easily adaptable. Don`t have blackberries.  Blueberries, strawberries or raspberries would all work beautifully, fresh or frozen. No goat cheese in the house? No problem, substitute cream cheese, feta or even mozzarella. I think you get the picture.
Here`s what you`ll need for your Goat Cheese Stuffed Chicken Breasts with Blackberries & Balsamic:
4 servings
Chicken Breast- 4 halves, boneless & skinless
Goat Cheese-4oz
Black Berries-8oz
Balsamic Vinegar- 4oz
Basil-small bunch thinly sliced
Honey-2 tablespoons
Garlic-1 clove minced
Shallot-1 tablespoon
Lemon-1 juiced & zested
Olive Oil

Start by placing the chicken between 2 sheets of plastic wrap or similar & gently pounding to about 1/4 inch thick. I like to use freezer bags for this because they`re a little thicker & can take the beating without tearing. Blackberry Chicken5Slice the basil & add to the goat cheese. Mix until well combined.Blackberry Chicken6Season your chicken well with salt & pepper. Add about an ounce of the goat cheese mixture, fold the ends over & roll up.Blackberry Chicken7Repeat with the remaining breasts. Preheat your oven to 375 degrees.Blackberry Chicken8Heat a splash of olive oil in a large oven proof skillet over medium high heat. When hot add the stuffed chicken & brown on all sides, about 2-3 minutes per side.Blackberry Chicken9Once browned slide in the oven to finish cooking, about 10 minutes.Blackberry Chicken2For your blackberry-balsamic sauce start by mincing the garlic & shallot as well as zesting the lemon. I actually used a vegetable peeler for the lemon & then minced. If you do this just be careful not to go too deep as the white inside portion of the lemon can be bitter.Blackberry Chicken3Add another splash of olive oil to a small sauce pan over medium heat. Add the garlic & shallot & cook about 2 minutes.Blackberry Chicken4Add in the balsamic, blackberries, lemon juice, lemon zest & honey. Bring to a boil, reduce heat to a simmer & cook about 10 minutes stirring regularly until the berries have broken down & the sauce has thickened. We`re ready to serve. Easy right?

  • Garlic-1 clove minced
  • Shallot-1 tablespoon
  • Lemon-1 juiced & zested
  • Olive Oil

Instructions
