Soup!!! I absolutely love soup! Let me say that again, love love love soup!!1 Today what we have is Gingered Sweet Potato Soup. I think this might be the perfect fall soup, velvety smooth, a touch of spice, a hint of sweet, incredibly healthy and just so so good!!
Here`s what you need:
Sweet Potatoes-2lbs peeled, rough chop
Onion-2 cups white or yellow, rough chop
Ginger-1/2 cup peeled and minced
Garlic-5-6 cloves minced
Chicken or Veggie Stock or water-8 cups
Peanut Butter- Creamy, 2 Tbl
Cayenne Pepper- 1-2 Tsp ground
Salt to taste
Here`s the base.
Peel and roughly chop your sweet potatoes & Onion. Peel and mince the ginger and garlic.
Heat a splash of olive oil over medium heat in a stock pot. Add the onions, stir and cook for 2-3 minutes.
Add the ginger and garlic, stir and cook another minute or so until fragrant.
Add your stock or water and the sweet potatoes. Increase heat to high, bring to a boil & reduce to a simmer. Simmer for about 20 minutes or until sweet potatoes are very soft.
Remove from heat & let cool for a few minutes.
Working in batches add the contents of the stock pot to a blender. Blend until completely smooth. Always be very careful blending anything hot. Don`t fill the blender cup more than 1/2 full and make sure to remove the center piece of the lid. Cover with a kitchen towel.
Smooth & ready for the pot.
Return the soup to your pot, add your lime juice, cayenne & peanut butter. Heat to a simmer over medium heat stirring occasionally. Simmer 10 minutes, adjust seasoning to taste.
