If you`ve been following you know at this point how I feel about soup, I love them. Not sure what it is but there`s something so satisfying about a hot bowl of yumminess. That being said what`s on this simple man`s plan to healthier eating menu today is Eat Your Veggies Split Pea Soup. After some of the gluttonous holiday meals I`ve had lately I need this, low fat, low carb, low calorie vegetable goodness. And hey, 5 main ingredients is all it takes. It can`t get easier.
Here`s what you`ll need:
Dried Peas- 1 14oz bag
Carrots- 2 cups small dice
Celery- 2 cups small dice
Onion- 1 cup small dice
Vegetable Stock- 2 quarts (chicken stock or water also work)
Dijon Mustard- 1 tablespoon

Prep your veggies.

Heat a soup pot over medium high heat, add a splash of olive oil & the carrots, celery & onion. Cook 5-6 minutes stirring occasionally.

Add the vegetable stock, mustard,  peas & a pinch of salt, stir, cover & bring to a boil. Reduce heat to low & simmer 45 minutes to 1 hour stirring every once in a while.Check & adjust seasoning to taste.Split Pea Soup PlatedEnjoy your Eat Your Veggies Split Pea Soup!!

  1. Hi Tez, love your recipes. Split pea soup was one of our family traditions after Christmas or anytime we had ham. Mom would make stock using the ham bone, carrots, onions and celery. She would remove the bone, etc. and soak the split peas in the stock for a few hours before proceeding exactly like your recipe but would also add some leftover diced ham to the soup. One of my favorites and of course brings back memories…. Thanks again!
