If you`ve been following you know at this point how I feel about soup, I love them. Not sure what it is but there`s something so satisfying about a hot bowl of yumminess. That being said what`s on this simple man`s plan to healthier eating menu today is Eat Your Veggies Split Pea Soup. After some of the gluttonous holiday meals I`ve had lately I need this, low fat, low carb, low calorie vegetable goodness. And hey, 5 main ingredients is all it takes. It can`t get easier.
Here`s what you`ll need:
Dried Peas- 1 14oz bag
Carrots- 2 cups small dice
Celery- 2 cups small dice
Onion- 1 cup small dice
Vegetable Stock- 2 quarts (chicken stock or water also work)
Dijon Mustard- 1 tablespoon
Prep your veggies.
Heat a soup pot over medium high heat, add a splash of olive oil & the carrots, celery & onion. Cook 5-6 minutes stirring occasionally.
Add the vegetable stock, mustard, peas & a pinch of salt, stir, cover & bring to a boil. Reduce heat to low & simmer 45 minutes to 1 hour stirring every once in a while.Check & adjust seasoning to taste.Enjoy your Eat Your Veggies Split Pea Soup!!
