Who doesn`t like teriyaki chicken? A Japanese favorite in terms of take out but why go that route when you can make so much better at home. This simple man`s plan to healthier eating today is Easy Weeknight Teriyaki Chicken. This is a total crowd pleaser any way you look at it & great for those busy hectic days that are life. Ready in about 30 minutes, budget friendly, a little sweet, a little spicy, so easy to make & most importantly so so delicious. Try this once & you`ll never want order out again. Serve over noodles, rice or what I did here was my Coconut Rice. The hint of coconut really compliments the chicken & adds another layer of flavor to the dish.
Here`s what you`ll need for your Easy Weeknight Teriyaki Chicken:
Chicken Thighs- 8-10 boneless & skinless
Lite Soy Sauce- 1/2 cup
Orange Juice- 1/3 cup
Sesame Oil- 1 teaspoon
Honey- 2 Tablespoons
Ginger- 1 Tablespoon if fresh, 1 teaspoon if powdered
Sambal Oelek, Siracha or other garlic chili paste-1 Tablespoon (optional)
Toasted Sesame Seeds- 1/2 Tablespoon
Green Onion- to garnish
Just a few easy ingredients comes together to make magic. I love using chicken thighs because they`re so flavorful, tender & juicy. Not a leg or thigh fan, go ahead & use breasts. It`ll be great.
Start with this simple marinade. Just mix the soy sauce, orange juice, sesame oil, ginger, honey & Sambal Oelek (if using) until well combined.This is a super quick marinade. You only need 15-20 minutes.Remove your chicken reserving the marinade.Heat a skillet over medium high heat and add the thighs. Cook 3-4 minutes per side or until cooked through. Remove to a plate & cover.Reduce heat to medium low & add the reserved marinade & butter. This is going to make a wonderful sticky sauce to glaze the chicken. I`ve made this without the butter but find it just brings such a richness to the sauce. Much better with!Add your chicken back to the skillet & cook another 3-4 minutes stirring regularly until the sauce has thickened. Be a little careful here not to burn the glaze. The chicken will be beautifully coated with yumminess. You`re ready to finish & serve.Sprinkle the toasted sesame seeds over the top & garnish with the sliced green onions. The sesame seeds add yet a whole other layer of flavoring here.So how easy was that. You`re family or guests are going to love you. This will find a spot in your dinner rotation guaranteed.
