It`s Monday & most likely my least favorite day of the week. Anyone else feel this way or is it just me? I think it would be so much better if we could just start the week on Tuesday. Sure, maybe you get the weekend off or at least Sunday but you come back to a box full of emails, meetings, school, activities & all the hectic business that`s life. And…you`re still expected to have something on the table come dinner time. Well, I`ve got something for you today I know you`ll enjoy. You can throw this together in 5 minutes using a few easy ingredients that`re probably already in your pantry or fridge & bake for about 1/2 hour. Done deal, dinner is served, moist, juicy & healthy, it`s just too good to be ignored. This simple man`s plan to healthier eating today is Easy Weeknight Parmesan Chicken Bake. Easy being the key word here & I think easy is perfect for Mondays. Or any other day of the week but especially Mondays.
Here`s all you need for your Easy Weeknight Parmesan Chicken Bake:
Chicken Breasts- 4 skinnless & boneless
Greek Yogurt- 1 cup, natural, no sugar added
Parmesan Cheese- 1/2 cup grated
Garlic Powder- 1 teaspoon
Italian Seasoning- 1 teaspoon
Cayenne Pepper- 1/2 teaspoon (optional)
Panko Bread Crumbs- 1/2 cup (optional)
S & PThe main players, really, this is just the easiest quickest dish to put together!Start by grating your parmesan. PLEASE use the real stuff & leave the green can alone. Hear me, PLEASE no green can. The end results aren’t really comparable. In a bowl add the Greek yogurt, garlic powder, parmesan cheese, Italian seasoning & cayenne pepper.Mix well to thoroughly combine.Preheat your oven to 375 degrees. Line a baking sheet with foil & lightly grease or give a quick hit of cooking spray. Season the chicken with a little S & P.Spread the parmesan-yogurt mixture evenly over the breasts.Sprinkle the Panko bread crumbs over the top. So easy right & taken like what, 5 minutes!! Slide your tray into the oven & bake for 25-30 minutes until cooked through. For anyone who doesn`t have one I totally recommend buying a meat thermometer. Chicken should be cooked to an internal temp of 165 degrees. By using a thermometer you can check & cook only as long as needed. You don`t want to over bake as the dish can dry out.Ready to plate. This is so delish & just ridiculously easy. Like I said, perfect for Mondays!!While the chicken was baking I roasted a little eggplant & whipped up a quick Caprese salad to complete the meal.
