First & foremost absolutely delicious, but incredibly healthy, quick & easy is what`s on this simple man`s plan`s menu today in the form of Easy Greek Style Baked Fish. Moist flaky fish sits on a bed of spiced pureed roasted red peppers & gets topped with a quick saute of olive oil, garlic, onions, olives, tomatoes, capers, white wine & lemon juice. I love the flavor combinations here & talk about good for you! Low fat, low carb, low calorie, gluten & dairy free but just so crazy good! And better yet, start to finish you`ll have dinner on the table in about 20 minutes. Can you really beat it? This might just be the best of all worlds in the what`s for dinner category.
Here`s what you`ll need for your Easy Greek Style Baked Fish:
Fish Filets- 4, 6-8oz, I used grouper but any firm white fish will work perfectly.
Roasted Red Pepper-2 peeled & seeded
Onion-1 thinly sliced
Green Olives- 1 cup
Kalamata Olives-1 cup
Garlic- 2 cloves minced
Cherry Tomatoes-2 cups
Capers- 1-2 tablespoons drained & rinsed
White Wine- 1/2 cup
Lemon- 2 juiced
Crushed Red Pepper
S & PPretty aren`t they!Preheat your oven to 400 degrees. Line a baking sheet with aluminum foil & give a quick shot of cooking spray. In a single layer add the fish filets. Season with salt, pepper, paprika & oregano. Squeeze some lemon over the top and into the oven they go. These cooked in 7-8 minutes but were also pretty thin. Add the roasted red pepper to a blender cup, season with a little salt, paprika & oregano & blend until smooth. Don`t you love the sweetness of red bell peppers when they`re roasted.Heat a skillet with a splash of olive oil over medium high heat. Add the onions, stir & cook a minute or 2.Add the garlic & crushed red pepper, stir & cook a minute more.In go the tomatoes, same drill, stir & cook for a minute or so.Add in the olives. Aren`t olives one of the best things ever! Briny, salty & so full of flavor!Now add the capers & white wine. Stir & cook for about a minute. Most of the wine will evaporate. Turn off the heat and squeeze another lemon into the mix. We`re just about ready. You`re kitchen is smelling amazing!Fish is cooked & ready to go. You probably just made this complete dish in between commercial interruptions. Ready to go.
To plate make a little pool of the roasted red pepper puree, lay a fish filet over & top with some of the tomato olive onion goodness. Spoon some of the sauce left in the pan over your fish & serve immediately.
