Ok, before we get started I have to say this might possibly be the best pork I`ve put in my mouth….. ever!! And I`m an extremely experienced eater of pig!! This simple man`s plan to better eating today is Dijon Rosemary Crusted Prime Rib of Pork. Sure to impress this makes a great elegant centerpiece for a dinner party, family gathering, holiday meal or well, just because. You won`t believe how juicy & tender this. What`s better, this is so unbelievably easy to prepare you just can`t go wrong.
Here`s what you`ll need for your Dijon Rosemary Crusted Prime Rib of Pork:
Prime Rib of Pork- 8 bone center cut
Whole Grain Dijon Mustard- 4-5 Tablespoons
Fresh Rosemary- 1-2 Tablespoons finely chopped
Garlic-3 cloves finely chopped
Agave Nectar or Honey-2 Tablespoons

The star of the show. Preheat your oven to 450 degrees.  Pat the roast dry with paper towels.Pork Roast4

Season both top and bottom well with sea salt & cracked pepper.Pork Roast2

Mix the mustard, garlic, rosemary & agave nectar.Pork Roast6

Fat side up add the Dijon mixture to coat. Place on a rack in a roasting pan or rimmed baking sheet & slide in the oven. Bake at 450 degrees for 15 minutes. Reduce heat to 300 degrees & roast for another 1 1/2- 2 hours or until an internal temperature of 150 degrees is reached. Remove from the oven & tent with foil to rest for at least 15 minutes before slicing. So??? How easy was that? Could not have been any simpler right?
