Ok, I`m not going to lie, I recently roasted a duck for an amazing ragu I`d been craving but am pretty sure half the reason was to get my greedy little hands on some duck fat. Why you might ask but simply put because it`s amazeballs! Light, silky smooth, savory, rich yumminess that adds magic to everything it touches. Fantastic with veggies, confit of anything & in today`s case potatoes. This simple man`s plan is Crispy Duck Fat Potatoes. Sure, regular roasted or pan fried potatoes are great but swap out the butter or olive oil for some duck fat & you`re talking something close to heaven. Golden & perfectly crispy on the outside, light & fluffy inside, this is a game changer!! No one`ll be able to put their finger on what`s so special, they just won`t be able to stop devouring them. Enough said, let`s get started.
Here`s what you`ll need for your Crispy Duck Fat Potatoes:
Small or New Potatoes- 2 lbs (if using larger potatoes cut in bite size pieces or slice)
Duck Fat-2-3 tablespoons
Salt & Pepper
Minced Garlic-optional
Fresh Herbs-optionalDuck Fat Potatoes1This recipe if it`s even a recipe is a two step process.Duck Fat Potatoes2Wash your potatoes well. Put into a pot with well salted cold water to cover. Bring to a boil, reduce to a simmer & cook 10-15 minutes until easily pierced with a fork but not mushy.Duck Fat Potatoes3Drain well and let cool until you can handle them. Duck Fat Potatoes4Once cooled cut in half lengthwise. Season with salt & pepper.Duck Fat Potatoes5Heat a couple of tablespoons duck fat in a cast iron or heavy bottomed skillet over medium high heat. When hot add the potatoes cut side down. Cook for 5-8 minutes until golden brown. Flip & cook another 5-8 minutes. If using garlic add now & give a stir. If you add it earlier it will burn & turn bitter.

Ingredients

  • Duck Fat-2-3 tablespoons
  • Salt & Pepper
  • Garlic-optional
  • Fresh Herbs-optional

Instructions

  1. Wash your potatoes well. Put into a pot with well salted cold water to cover. Bring to a boil, reduce to a simmer & cook 10-15 minutes until easily pierced with a fork but not mushy.
  2. Drain well and let cool until you can handle them.
  3. Once cooled cut in half lengthwise. Season with salt & pepper.
  4. Heat a couple of tablespoons duck fat in a cast iron or heavy bottomed skillet over medium high heat. When hot add the potatoes cut side down. Cook for 5-8 minutes until golden brown. Flip & cook another 5-8 minutes.
  5. If using garlic add to the pan & stir. The garlic will burn & turn bitter if you add it earlier.
  6. Serve your Crispy Duck Fat Potatoes immediately & get ready to swoon!!!
