Hearty, warm, comforting, tangy, spicy, filling, absolutely totally delicious & ready in about 30 minutes is how I`d begin to describe this simple man`s plan to healthier eating today. What I`m talking about is Crazy Easy Crazy Good Chicken Pozole Verde.
Pozole (which translates to hominy) has many variations is a traditional soup or stew from Mexico. All variations include a base of cooked hominy in broth. The three main types of pozole are blanco/white, verde/green and rojo/red.
White Pozole is the preparation without any additional green or red sauce. Green Pozole adds a rich sauce based on green ingredients, possibly including tomatillos, cilantro, jalapeños or serranos. Red Pozole is made without the green sauce, instead adding a red sauce made from one or more chilis, such as guajillo, piquin, or ancho.
Frequently pozole is served as a celebratory dish throughout Mexico, including quinceañeras, weddings, birthdays and New Year’s celebrations but why possibly limit ourselves. This is a dish I need far more often & with absolutely no special reason other than it`s pure yumminess. It`s great for feeding a crowd & becomes really interesting with traditional add ins such as radishes, cilantro, cabbage or lettuce, chile peppers, onion, limes etc. Serve up bowls & let everyone garnish to their hearts content.
For some side benefits & anyone with dietary restrictions this Crazy Easy Crazy Good Chicken Pozole Verde is gluten free, dairy free, low calorie & low fat. Any way I look at it it`s hard to go wrong.
Here`s what you`ll need for your Crazy Easy Crazy Good Chicken Pozole Verde:
Hominy- 2 28 oz cans drained & rinsed. You can also use dried but it needs to be soaked & cooked first.
Chicken Stock- 8 cups
Chicken- 4 cups shredded. (think rotisserie here for an easy quick hack)
Tomatillo Salsa Verde here- 2 cups
S & P to taste
Cilantro- 1 bunch chopped
Cabbage or Lettuce-1 cup chopped
Radishes- 1/2 cup thinly sliced
Serrano or Jalapeño Peppers- 3-4 thinly sliced or minced
Avocado- 2 pitted & cut up
The main players. The hominy is in that big pot with chicken stock so you can`t see them. My bad. I`m using a rotisserie chicken for times sake. Feel free to cut & cook your chicken in the stock & then shred if desired. I`d probably use a whole chicken but breasts will also work. That`s my Tomatillo Salsa Verde from my last post which will be adding the “verde“ part of this pot of goodness. My opinion but you should have salsa in your fridge at all times, probably more than 1!!Start by draining & rinsing the hominy. Place in a colander & rinse until the water runs clear.
Shred the chicken. As I said before I was in a time crunch so used a store bought rotisserie chicken. It was really the perfect amount for this recipe & I love the combination of white & dark meat.To a large pot add the chicken stock, hominy, shredded chicken & Tomatillo Salsa Verde. Stir well to combine, bring to a boil, reduce heat to a simmer & cook about 20 minutes. Check & adjust seasoning to taste. While your Crazy Easy Crazy Good Chicken Pozole Verde is cooking prep your garnishes. Dinner is served. Ladle the pozole into bowls & let everyone garnish as they wish. How stupid easy was that to make & it`s so freaking good!!
