I am a huge fan of adding flavor in as many ways to a plate or dish as possible. Occasionally it can be more involved or time consuming but sometimes it’s not any harder than simply replacing one ingredient for another. This is one of the easiest yet very flavor rewarding.
We are making coconut rice. This is an awesome accompaniment to any spicy chicken or seafood entrée. The coconut water adds a bit of natural sweetness and the overall flavor is amazing.
Here’s all you need:
Rice or in this case a rice quinoa blend
Bring two parts Coconut Water to a boil. If using- add a touch of butter and Salt or Bullion. Add 1 part Rice, give it a stir, cover tightly and reduce heat. Simmer about 20 minutes and remove from heat. Fluff with a fork and enjoy.
