If you`ve been hanging around Chile and Salt for a bit you probably know how I feel about soup. I love them, adore them, cherish & sometimes dream about them! Smooth & creamy, hearty & chunky, hot & spicy or cool & fresh no matter, they all land at the top of my favorites list! It`s a sickness I have & will readily admit but am not ashamed in the least.
Now let`s talk chowder`s. Who doesn’t love a bowl of creamy New England Clam Chowder. It`s really the definition of pure comfort food. This simple man`s plan to healthier eating today is a lightened up dairy free, gluten free take on this classic in the form of Coconut Clam Chowder (DF & GF). I simply replaced the cream or milk with Coconut Milk & I have to say it was absolutely delicious. This comes together really easily & quickly so what are you waiting for!
Here`s what you`ll need for your Coconut Clam Chowder (DF & GF):
Baby or Minced Clams- 1 28oz can
Coconut Milk-1 14oz can
Chicken or Fish Stock- 4 cups
Potatoes- 2 cups cubed
Onion- 1 cup chopped
Celery- 1 cup chopped
Carrots- 1 cup chopped
Garlic- 2 cloves minced
Bacon- 4 oz(precook weight) browned & crispy
Bacon Grease- 2 Tablespoons
Fresh Thyme- a few sprigs or 1 teaspoon dried
Sambal Oelek, Siracha or other hot sauce- 1 Tablespoon (optional)The stars of the show.
Let`s get the prep work or mise en place done first. This always helps as a way to keep yourself organized. Chop, brown & crisp the bacon. Remove to paper towels to drain reserving 2 tablespoons of grease in your soup pot or Dutch oven. Chop the carrots, celery & onion, mince the garlic & cube your potatoes. Heat the reserved bacon grease over medium high heat & add the carrots, celery & onion. Cook 4-5 minutes stirring occasionally.
Add in the garlic & cook for a minute more.
Toss in the cubed potatoes.
Now your stock & the liquid from the clams.
Don`t forget the Thyme. Bring to a boil & reduce heat to a simmer for about 10 minutes or until the potatoes are soft but not mushy. We want them to retain their textural character.
Now it`s time for the coconut milk, clams, bacon & Sambal Oelec or hot sauce if using. Into the pool they go.
Stir well & bring back to a simmer for 10 minutes. Taste & adjust your seasoning as needed. (S & P) That`s it, really so stupid easy was it not?
