Here`s what you’ll need for your Chipotle Shrimp with Silken Sweet Corn Sauce:
Shrimp- large, peeled & deveined (I used 16-20 count, 6-8 per person)
Yellow Sweet Corn- 1 15oz can for 4 servings
Butter- 1 Tablespoon
Chipotle Powder. 1 teaspoon
Smoked Paprika. 1/2 teaspoon
Salt- a pinch
Coconut Oil-2 Tablespoons divided (Important to use)
Cilantro- for garnish (optional)Add the sweet corn with the liquid to a sauce pan with the butter. Bring to a boil, reduce heat & cook for 2-3 minutes.
Add to a blender cup and blend on high for a minute or so.Pour into a fine mesh strainer over a bowl.Push through with the back of a spoon reserving the solids. Discard what`s left. You`ll have this beautiful, ready to use sauce in the bowl.Add the remaining Coconut Oil to a saute pan over medium high heat. Add your shrimp & don`t go anywhere, these are going to cook quick, only a couple of minutes. Remove your shrimp from the pan & plate. Spoon some of the Silken Sweet Corn Sauce to a dish of your choice, add the shrimp & garnish with a little cilantro.
