So do you love BBQ season? I do for sure although my ¨season¨ is 12 months a year. There`s just something about that extra flavor imparted when cooked on the grill. It`s really nothing short of AMAZING! Steak, chicken, seafood, vegetables, even fruit, there`s just magic that happens. Today I want to share a favorite & what I think is one of the BEST chicken dishes to EVER cross my tongue. (And there`s been A LOT!) This simple man`s plan to better eating is coming at you with Chinese Five Spice Grill Smoked Chicken. Chicken legs & thighs are 1st given a bath in a crazy flavorful easy marinade & then hot smoked on the grill for about 45 minutes to an hour depending on size. The result is smoky, moist, spicy, OMG so freaking good, I need more, forget about the side dishes, happy dance in your mouth poultry poetry. Seriously not kidding, you need this in your life! BTW, if your more a white meat kind of person feel free to use breasts, you really won`t go wrong.
Here`s what you`ll need for your Chinese Five Spice Grill Smoked Chicken:
Chicken Legs & Thighs- 8-12 pieces depending on appetite.
Chinese 5 Spice- 1 Tablespoon
Fish Sauce- 1 Tablespoon
Soy Sauce- 2 Tablespoons
Garlic- 3-4 cloves peeled & chopped
Fresh Ginger- 2 Tablespoons peeled & chopped
Rice Wine Vinegar- 2 Tablespoons
Sesame Oil- 1 teaspoon
Sambal Oelek or Siracha- 1-3 Tablespoons depending on spice tolerance
Lime- 1 juiced
Wood ChipsA quick look at today`s players.Make your marinade. Peel & chop the garlic & ginger.To a blender cup add the Chinese 5 Spice, Soy Sauce, Fish Sauce, Rice Vinegar, Sesame Oil, Lime Juice, Sambal Oelek, Ginger & Garlic. Give it a good blitz until fairly smooth to combine.Add the marinade to your chicken pieces & thoroughly coat. I love my ziplock freezer bags. Refrigerate and let your chicken marinate for at least 2 hours but overnight is better. This marinade is so good you really want to get it into the chicken.When you`re ready light the grill for indirect heat.Soak the wood chips in water for 1/2 an hour. We want them to smoke, not just burn off.Add the chicken to your grill away from the flame.Add a good handful of the wood chips to your coals. If your using a gas grill a disposable pie pan works well here. Add the chips to the pan & set directly over your flame.Close the lid & let the grill do it`s thing. You`re looking for a temperature of 350 degrees. After about 20 minutes add another handful of wood chips. Repeat again after another 20 or so minutes. Depending on your grill you may need to rearrange the pieces of chicken for even cooking. Grill-Smoke for 45 minutes to an hour or until the chicken is cooked through. Chicken should be cooked to an internal temperature of 165 degrees. A meat thermometer is great to have.
Remove from the grill & tent with foil for a 5-10 minutes if you can wait that long. You`re ready to serve!
