Chilled Avocado Gazpacho

Well, summer is definitely here in full swing so I thought I’d share a personal favorite. So simple, quick and delicious and perfect for these hot cabo days and nights.

Chilled Avocado Gazpacho
2 large cucumbers peeled, seeded & chopped
1 Avocado chopped
1 bunch cilantro chopped
Juice of 2-3 limes
1 Serrano chile seeded & chopped (More or less depending on spice tolerance)
1/2-1 Tbl caldo de pollo powder or chicken bullion
1 cup water, veg or chicken stock
Salt & white pepper to taste
Combine all ingredients in a blender cup & blend until completely smooth.
Add more liquid if needed to desired consistency.
Check for seasoning & adjust accordingly.
Chill & Serve
Garnish with a cilantro leaf, a bit of crema and/or finely diced tomato.
