Chicken Parmesan… lightened up

Oh yes, Italian comfort food at it`s juicy, cheesy, tomatoey, saucy best. What I`m talking about is a classic but today with a slight twist to healthen it up just a bit. Today I have this simple man`s plan to Chicken Parmesan…lightened up. We`re going to bake instead of fry our lightly breaded chicken, finish it with our Marinara Sauce from Scratch, mozzarella & parmesan.
Here`s what you`ll need:
Chicken Breast Cutlets- seasoned with salt & pepper
Eggs-2 beaten
Seasoned Bread Crumbs- 1 cup, mixed with a tablespoon each of dried basil & oregano, 1 teaspoon garlic powder, 1/4 cup parmesan & a pinch of salt.
Flour- 1 cup
Marinara Sauce from Scratch– or your favorite red sauce
Parmesan Cheese- 1/2 cup grated, divided
Mozzarella Cheese- 1 cup grated
Parsley- finely chopped
Preheat your oven to 400 degrees
Season your chicken with a little salt & pepper.
Add the breadcrumbs, flour & eggs to 3 separate shallow bowls.

 

 

Dredge the chicken in the flour shaking off any excess.

 

 

 

 

Next into the beaten eggs coating both sides.

 

 

 

 

Into the seasoned bread crumbs.

 

 

 

 

Grease a baking dish & add the chicken in a single layer.

 

 

 

 

Bake 20 minutes, turn the chicken over & bake for another 15.

 

 

 

 

Remove from the oven & top with your sauce.

 

 

 

Add the mozzarella and remaining parmesan.

 

 

 

 

Return to the oven for another 5-7 minutes until you`ve got cheesy melty goodness. Garnish with a little chopped parsley.
