Oh the underrated chayote, a very mild Mexican squash that looks like a green pear with a semi sweet flavor. This vegetable is super versatile as it can be eaten raw, roasted, steamed, grilled, added to soups, stews, eaten by itself or with a myriad of other ingredients. This is a super refreshing raw salad that is simple and quick, eaten on it`s own or used to top that next BBQ Beef Brisket sandwich. This is a basic version but lends itself very well to other additions, bell peppers, cabbage, carrots, avocados, radishes etc.
2 Chayote Squash Pitted & Julienned
1 Serrano or Jalapeno Chile Seeded & Minced
1/2 Small Bunch Cilantro Chopped
1/2 Lime Juiced (or 1 if small)
3 Tbls Extra Virgin Olive Oil
2 Tbls Apple Cider Vinegar
Salt & Pepper To Taste
Combine the Chayote, Chile & Cilantro. Separately mix the Lime Juice, Olive Oil & Vinegar. Toss to mix & season with salt & Pepper.Enjoy!!
