Ok, let`s face it, there`s nothing like a creamy buttery side of mashed potatoes!! But…. If you are trying to cut down on your carb intake or just want something lighter I have a really good substitute, Cauliflower Puree. In fact I find myself craving this after some of my super heavy holiday meals. Trust me, you won`t go wrong with this recipe.
Here`s what you need:
Cauliflower- Cored & roughly chopped.
Butter- 2 tablespoon or to taste
Sour Cream- 2 tablespoon or to taste
Garlic Powder- 1 teaspoon
White Pepper- 1 teaspoon
Cauliflower cored & chopped
Heat a sauce pan of water to boiling & add the cauliflower. Boil for 10-15 minutes or until easily pierced with a knife.
Drain and add to your food processor. Add the remaining ingredients and let the machine do it`s thing. Stop & scrape the sides a couple of times & process until creamy smooth. Taste & adjust seasoning as needed.
Serve your Cauliflower Puree & enjoy!!
