Today this simple man`s plan to healthier eating is coming to you with a classic dish originating from the state of Jalisco, Mexico. (Also the birth place of Tequila but that`s for another day.) What I`m talking about is Carne en Su Jugo / Meat In It`s Juices. Some where between a soup & a stew this dish is pure rich spicy beefy goodness that somehow manages to be hearty & light at the same time. I mean come on, beef, bacon, beans, chilis & tomatillos (I used my Tomatillo Salsa Verde) finished with all your fresh typical garnishes that make so many Mexican dishes jump, what`s not to like. Seriously, have this once & you`ll be sold for life! Totally not kidding & so easy to make! If you`ve not had this before you need to. This could be a game changer! Also great for serving a crowd feel free to double or triple the recipe.
Here`s what you`ll need for your Carne en Su Jugo / Meat In It`s Juices:
Beef- 1lb of sirloin, London broil or skirt steak cut into small pieces.
Bacon- 8oz thinly sliced & cut in small pieces.
Pinto or Black Beans- 2 cups cooked or 1 15oz can drained
Tomatillo Salsa Verde- here 1-2 cups
Beef Stock- 4 cups
Chipotle Pepper- 1 Tablespoon ground or 1 en adobo blended with the beef stock. (Optional depending on how much heat you want)
Avocado- Chopped to garnish.
Fresh Cilantro- Finely chopped to garnish.
White Onion- Finely chopped to garnish.
Serrano or Jalapeño Chiles- Finely chopped to garnish.
Radishes- Finely chopped to garnish.
Limes- Quartered to squeeze & garnish.
S & PThe stars of the show.Finely dice the bacon & cook in a Dutch oven or large heavy bottomed pot over medium high heat until crisp. Remove with a slotted spoon & drain on paper towels. Discard all but about 2 Tablespoons of the rendered bacon grease.While the bacon is cooking cut the beef into small pieces & season with salt & freshly ground pepper.Add the beef to the pot & brown well over a medium high flame.Add in the Tomatillo Salsa Verde. You should really have this on hand in the fridge at all times! It`s such an easy go to ingredient for dishes like my Puerco Braseado en Tomatillo Salsa Verde/Braised Pork in Tomatillo Green Sauce or Crazy Easy Crazy Good Chicken Pozole Verde not to mention with your favorite chips, tacos, quesadillas, eggs or just about anything!Add back in the bacon.Now the beans, beef stock & Chipotle pepper if using.Give everything a good stir, put the lid on or cover, bring to a boil & reduce heat to a gentle simmer. Cook for 30-40 minutes until the beef is nice & tender & your ready to serve.Ladle into bowls, add what ever garnishes make you happy, give a quick squeeze of lime & get ready for a happy dance in your mouth!
