Need a quick, easy & completely delish appetizer? These fall under the category of the perfect finger food & a fantastic addition for your next get together. This simple man`s plan to healthier eating today comes in the form of Caprese Stuffed Mushroom Bites. Earthy mushrooms, creamy fresh mozzarella, juicy cherry tomatoes, savory parmesan, a touch of balsamic & a bit of basil combine for a complete happy dance in your mouth. Better yet these babies only need about 10 minutes active prep time & 15 minutes or so in the oven. Now, they`ll be gone in 5 minutes so you might want to make extra, or at least put a couple aside for yourself. In the time it takes you to grab a beer or pour a glass of wine that platter will be empty. Trust me here, they`re always the first to go.
Here`s what you`ll need for your Caprese Stuffed Mushroom Bites:
Mushrooms- Crimini or white button, stems removed
Fresh Mozzarella-sliced & cut into pieces
Cherry Tomatoes-halved
Parmesan Cheese-grated
Fresh Basil- thinly sliced
Olive Oil
Balsamic Vinegar

Preheat your oven to 400 degrees. Halve the tomatoes, cut the mozzarella & grate the parmesan.Caprese Mushrooms3Line a baking sheet with foil. Just makes clean up so easy. I like easy a lot! Remove the tough woody stems from your mushrooms. Add a touch of Olive oil to the mushroom cups. Don`t they make the perfect little vessels.Caprese Mushrooms4Fill these lovelies with a bit of the mozzarella. Just be a little careful here so you don`t break the mushrooms.Caprese Mushrooms5Drizzle a little balsamic over the cheese. I love the touch of sweetness this adds.Caprese Mushrooms6Top the mozzarella with a tomato half.Caprese Mushrooms7Finish them off with some of the grated parmesan. Not rocket science here, these are almost too good to be true. All that`s left is a little oven time. Bake for about 15 minutes, remove to a platter & sprinkle some thinly slice basil over the top.   10. Add a couple of granules of sea salt to each mushroom if desired.
