Caprese Chicken

What to make for dinner, that was the question. Wanted something comforting, healthy quick & easy. A stop at the market yielded heirloom tomatoes as well as heirloom carrots. pretty excited about these two finds. Knew I had some fresh mozzarella, basil & boneless chicken thighs at home so the decision was made. Caprese Chicken with Balsamic Roasted Carrots, the perfect solution and I have to say it was pretty phenomenal!!

For the Caprese Chicken here`s what you`ll need:
Skinless Boneless Chicken Thighs-1-2 per person depending on appetite. You can definitely use breasts if you prefer.
Tomato-3-4 cherry, teardrop or other small tomatoes per thigh halved.
Garlic- minced
Fresh Mozzarella-1 slice or so per piece
Fresh Basil-Chiffanade or thinly sliced
Olive Oil

 

Preheat your oven to 375 degrees.
Season your chicken with salt & pepper.
Heat a skillet over medium high heat with a tablespoon of olive oil. Add chicken & brown 3-4 minutes.

 

 

 

 

Turn and brown the other side. Place the skillet & chicken in your preheated oven for 7-8 minutes.

 

 

Remove and top with the fresh mozzarella. Return to the oven for 2-3 minutes until you have cheesy melted goodness.

 

 

 

While your chicken is finishing heat a pan over medium heat & add another splash of olive oil. Add the tomatoes & season with a little salt & pepper. Cook for about a minute.

 

 

 

Add the garlic, stir and cook for another minute or so.
Remove the chicken & plate. Top with the tomatoes & fresh basil.

 

 

 

Nothing left to do but eat!!
